Blueberry Yogurt Popsicle Recipe

Homemade Popsicles are all the rage in food circles this year. They blow those plastic tubes of neon colored sugar water Popsicles out of the water!

I officially declare 2011 The Summer of the Popsicle. It's a nice follow up to 2010 The Summer of the S'more.

My family discovered frozen fruit bars last summer. I felt better about serving a snack that is fruit and juice. It became spendy because a box of frozen fruit bars never lasted more than a few days after I brought it home from the store.

Lo and behold, the winter holidays dropped a family gift of a set of  BPA free plastic Popsicle molds similar to these down our chimney. Thanks, Santa me! (Disclosure: I am including affiliate links for your convenience.)

Last week Mother Nature turned off the cold and turned up the heat to full blast. Ahhhh, a nice homemade frozen fruit bar would be refreshing in this weather.

Blueberry Yogurt Popsicle Recipe

It tastes as good as it looks!

You will need:

1 cup of blueberries - you can use either fresh or frozen blueberries

1 cup of plain yogurt

1 teaspoon of vanilla

1/4 teaspoon of nutmeg - you can buy nutmeg here

2 tablespoons of sugar

Step by Step How to Make this Frozen Fruit Bar Recipe:

1.Combine all of the ingredients in a blender until it is well blended.

2.Pour the mixture into popsicle molds and freeze in the freezer.

3. Remove the popsicle from the mold.

4. Eat.

5. Repeat.

Oh la la. My family loves to make homemade popsicles too but do it the easy way. Put juice in our holders and freeze. Yours tho look yummy. We will have to try this out with our blueberries left over from the 4th. Thanks for sharing.

I just send my daughter this link. She loves making them for her kids. Have you ever put spinach in them? She puts fresh spinach in her smoothies and you'd never know but the kids are getting the veggie.

My father would like these. He's a big fan of frozen fruit bars and popscicles. The cose of those things can be crazy, so it would be nice to make homemade ones for a fraction of the costs.

Using yogurt is a great idea. These are perfect for the hot weather. Come and see them featured at My Meatless Mondays. Please bring another great recipe.
Yum! Perhaps I will sub with a almond or coconut milk for the yogurt! I am waiting for my possible molds in the mail! :)
Let me know how it goes! I developed this recipe before I made a vow to stick to lactose free foods to calm my tummy troubles. I still make these Popsicle but wish for an alternative I can eat without lactose intolerant side effects.
